Sweet White Wine
Alea is a sweet white wine made from overripe Sauvignon Blanc grapes, harvested from a vineyard located in the lowest and most ventilated part of our estate. In this area, the alternation of moisture in the early morning hours and exposure to sun and wind in the afternoon creates ideal conditions for the development of Botrytis cinerea, the so-called “noble rot.”
This natural process leads to a concentration of sugars and the formation of complex, enveloping aromas, among which notes of saffron, honey and candied fruit emerge.
The grapes, once harvested, are gently pressed. The must then ferments and ages in French oak barrels, where it remains for at least 18 months. Unlike many wines from botrytized grapes, the fermentation of Alea is not arrested: it is allowed to continue naturally until it reaches equilibrium, converting much of the sugars into alcohol, leaving a residue of between 80 and 100 g/l. This approach results in a less sweet, drier and more elegant wine, where aromatic richness is balanced with freshness and tension.
