General information:

The Merlot vine enjoys a north-western exposure, whereas the Barbera vine, planted more recently, has a south-western exposure. The vines are grown with the utmost care during every vegetative growth stage. After veraison, part of the grapes are thinned out to ensure optimal cluster growth and ripening. The grapes are carefully selected and placed in crates.

Vinification and ageing:

Once harvested, the grapes are crushed and destemmed before undergoing alcoholic fermentation using selected yeast strains. They undergo traditional red wine vinification, using modern stainless steel containers at a continuously controlled temperature. The Merlot and Barbera grapes are vinified together to blend their properties, which, at a certain point while ripening, compensate each other in terms of acidity, colour, and sugar content. After a second fermentation (malolactic fermentation) in stainless steel containers, the wines are racked into large durmast barrels for the ageing process.

At the end of the ageing process, UVA MATRIS ROSSO is bottled and left to rest for a few months in an underground cellar, which provides the best natural conditions for the final ageing process.

Characteristics:

Intense ruby red colour with pleasant hints of purple.

Fine and persistent bouquet of ripe fruits on the nose.

Soft and balanced on the palate. The acidity of the vine variety blends well with the other structural elements, which make it pleasant and provide a persistent finish.

The ideal serving temperature is 18 °C.
