Pumpkin and wine rice

 

Uvamatris recommends a hot dish for a tasting Autumn!

Ingredients:

  • CARNAROLI RICE 320g
  • VEGETABLE BROTH (carrot. onion, celery)
  • BUTTER 50g
  • PUMPKIN 600g
  • GRANA CHEESE 80g
  • PEPPER 
  • ONIONS 100g
  • UVAMATRIS WHITE WINE
  • SALT

Recipe:

For vegetable broth: cut a carrot, a celery and two onions and put all in a pot full of water and a pinch of salt. Make them boil and let all cook for an hour. Filter broth and keep warm.

Mince an onion and brown it with oil for 10 minutes, than add a diced pumpkin and continue to brown for few minutes. Add a ladle of broth till the pumpkin is cooked.

In another pan, toast rice over high heat, often mixing, than deglaze with Uvamatris white wine. When wine will be completely vaporized, add in the pumpkin’s pan and mix all.

When rice begins to dry out, add a ladle of broth each time this one evaporates. At the end, add salt and pepper, a knob of butter and Grana cheese. Before tasting, wait a minute.
