700 gr of anchovies
2 bay leaves
100 ml of white wine
Extra virgin olive oil
Put in a pot the wine and the two bay leaves and bring it to a boil. In the meantime clean the anchovies, boning and opening them. Put the anchovies in the wine and boil them for one minute. So you can drain and put away them. In a bowl put a just a little bit oil, so you can lay down the anchovies in layers with some parsley. In the end you can cover the anchovies with a little bit of oil and let season them for some hours. Add a pinch of pepper and the the dish is done.
